Loaded Hasselback Potatoes

These Loaded Hasselback Potatoes are an absolute banger. You might have seen hasselback potatoes before. However, they don't compare to these bad boys. The pictures say it all, rich, vibrant, and delicious. Enough said. Let's cook.

Supplies

  • Russet Potatoes (medium)
  • Bacon (1 Pack)
  • 1 Avocado
  • 6 tbs mayo
  • 6 tbs ketchup
  • 1/2 tsp paprika
  • 1/4 tsp salt
  • 1/4 tsp garlic powder
  • 3 tbs oil

Cut the Potatoes

Use a pair of chopsticks (or anything else thin and about 0.1 inches thick. Lay the potato between the two chopsticks and make thin, delicate slices all the way down the potato, perpendicular to the chopsticks. Be gentle, these potatoes ain't made of steel.

Bath, Microwave, Oil

After cutting the potatoes, put them into a water bath for about 5-10 minutes. This helps remove the starch from the potato...as you can see in the photo above. Put them all into a Pyrex dish or a microwave safe container. Microwave in increments of 2 minutes until cooked through. When you poke the potato flesh with a fork, it should be soft and penetrable. The number of times you will have to microwave them depends on how many and how big your potatoes are. For my 3 medium potatoes, I microwaved them for about five minutes (2 min, 2 min, 1 min). Once they're cooked through, use a brush to get oil in between each slice. This will help them to separate and get crispy in the oven. Sprinkle some salt and pepper on top for extra flavor.

BROIL

Broil your potatoes until they look crispy and golden brown on top. Be sure to keep a close eye on em in the oven because they tend to crisp pretty fast. Meanwhile, make the sauce and cook dat bacon.

Secret Sauce and BACON

Cook your bacon until it's nice and crispy on both sides. Pat the oil out and crumple into small bits. Meanwhile, make that secret sauce. Combine equal parts of mayo and ketchup (6 tbs each). Add seasonings to your taste. I added salt, garlic powder, and paprika.

PRO TIP: Layer a ziploc bag in a cup so its easier to mix...you can use this bag to pipe the sauce on the potatoes later

Take your potatoes and put em on a plate. Cut a tiny corner of your ziploc baggy and pipe the sauce on...don't hold back dude. Sprinkle on the bacon and top with an avocado slice. Now that's what I call...fire.
