Lazy Yet Crazy Tasty Grilled Cheese Sandwiches

The secret is that they aren't actually grilled, they're baked.  The only dishes that need to washed afterward: butter knife, a spoon, and a cookie sheet.  While it bakes, the house smells like an Italian restaurant.

Gather Ingredients and Preheat Oven

You will need:
Bread (2 slices for each sandwich)
Butter
Grated Cheese (You could grate your own, but I've done the price comparison, it's worth the extra 20-30 cents to avoid dirty dishes, in my opinion.)
Cream Cheese (I prefer using the whipped cream cheese for this because it's easier to spread.)
Seasonings (I usually use: dill, tarragon, onion powder, and garlic powder.  Tarragon is part of what makes Ranch dressing so tasty.)
A cookie sheet (The sheet in this picture was small.  If I'm cooking for a crowd, I usually use a bigger cookie sheet to bake 8 at a time.)
A Butter Knife (For buttering bread)
A Spoon (For the cream cheese, you could also use a knife if you prefer.)

Preheat the oven to 350 degrees F.

Butter One Side of the Bread

Butter one side of each bread slice.

Butter Side Down

Flip over the bread slices so that the butter side is down.

Add Cream Cheese

Spread a thin layer of cream cheese on the top of the bread slices.  If you like your sandwich really creamy you could make it thicker, but it will ooze out a bit and give you more clean-up work later.

Sprinkle Seasoning

Sprinkle on as much seasoning as you like.  You can experiment with what kind you use.

Add Cheese

Sprinkle on some grated cheese.  You could do slices of cheese if you'd like. (For some reason, I forgot to photograph this step.)

Top Slice

Add the top slice of bread, and butter the top of it.

Bake

Place the whole cookie sheet full of sandwiches into the oven for 5-10 minutes.  Place it in the middle rack, or loser rack.

Use Your Nose

I usually wait for the house to smell like garlic bread or toast as my guide for how long to bake.  This picture (the sandwich in the middle is flipped) shows what the bottom of the sandwiches look like at 5 minutes of baking.  It's lightly toasted, not much crunch.  If you like your grilled cheese lightly toasted skip ahead a step.

Smelling Toastier

This is what the bottom of the sandwiches look like after 10 minutes of baking.  Just right for me!  (If you like you sandwiches extra crispy you can bake longer.)

Flip or Broil

If you wanted, you could use a spatula to flip all the sandwiches, and bake them until both sides are toasty.   I've found that sometimes the sandwiches like to fall apart and make a mess if they aren't flipped just right.  Even if you flip them just fine, you'll have another dish to wash.  Let's keep things lazy- Don't flip the sandwiches, flip a switch.  Switch your oven from bake to broil.  This way the tops of the sandwiches get toasted.  I like to move the cookie sheet to the top rack for this step.

Use Your Nose Again

I was distracted a bit, and didn't catch these until they had broiled about 12 minutes.  They were just a bit toastier than I normally prefer, but not bad.

These sandwiches go great with some tomato soup, or just eat them alone.
