Lattice Crust Apple Pie
I love making this apple pie. Is fun to weave the dough and I like the sweet-sour taste of the apples.
Dough Ingredients
Ingredients for the dough:
- 210gr unsalted butter
- 14.5oz plain flour
- 1 egg yolk
- 1 tbsp lemon juice
- 2-3 tbsp cold water
Dice 210gr of butter, measure 14.5 ounces of flour and add a bit of salt to it, separate an egg yolk and squeeze 1 tbsp of lemon juice.
Dough - Step 1
In a bowl mix the flour and butter by hand until it resembles breadcrumbs.
Dough - Step 2
Add the lemon juice, the egg yolk and 2-3 tbsp of cold water.
Mix everything until the dough comes together.
Wrap the dough in clingfilm and chill in the fridge for about 45min or so. Meanwhile preheat the oven to 200 degrees Celsius.
Filling Ingredients
For the filling you need: 3 bramley apples and 6 other apples like braeburn or pink lady, caster sugar, cinnamon, some lemon zest and half of lemon juice.
Apples
Peel, core and chop the apples.
Place everything in a saucepan.
Simmer the apples on a medium heat for about 10-15min, then leave it to cool a bit.
Rolling the Dough
Take the dough out from the fridge and cut in 2. You need about 2/3 for the base and a third for the crust.
Flour the work surface and start rolling your dough.
* Don't give up if it starts crumbling, as it will be better while working it with the rolling pin.
Line the tray with the dough and trim the edges.
Lattice
Roll the rest of the dough and cut into strips.
Spoon in the filling, then start creating the lattice crust by weaving the strips under and over every other strip.
* You can do that on baking paper and turn it over the pie if it's easier for you or do it directly on the top of the pie like I did.
**Don't worry if some strips will break as you can fix them with a bit of dough.
Glaze
For the glaze you need: 1 egg, a tbsp of sugar and a tsp of milk.
Beat all the ingredients, then brush all over the pie.
Baking
Bake the pie for 35-40 minutes, or until the pastry is golden and firm.
After taking the pie out of the oven I sprinkled a bit of icing sugar on top.
* You can serve it with cream, custard or vanilla ice cream, however you like it.
