Just Peachy Mango Sorbet
One day this summer I decided I was going to finally have friends over, instead of spending another day binge watching Netflix and playing video games. In a mid August heat wave, we decided to have a potluck picnic. Everyone was bringing the basics: pasta salads, brownies, spinach dip, etc. I thought I had the perfect idea, I was going to make ice cream, but then I remembered half of my friends were lactose intolerant. So I got a new, better idea, an idea that I would soon learn all my friends would be asking for all day; my Just Peachy Mango Sorbet.
For this sorbet you will need:
- ½ CUP of frozen mango's.
- 1 CUP of frozen peach slices.
- 1 ½ CUP of peach or fruit medley juice.
- A food processor.
- A spatula to help get every last bit of the sorbet.
- A wide bowl.
- Cling wrap.
- A ice cream scooper or large spoon.
- Serving bowls and spoons or cones.
Add your frozen mango's and peach slices to your food processor along with your fruit juice.
Pulse a few times until slightly lumpy, then blend on medium or the half way setting, then blend on high for 30 seconds, or until smooth and thick.
Pour mixture into a wide bowl, using your spatula to get every last drop. Smooth out the top and cover with cling wrap.
Put bowl in the freezer and wait for 2 hours.
Take out your sorbet. Scoop with an ice cream scooper or large spoon; serve in a bowl or a cone.
Have fun, enjoy some nice cold sorbet in the hot, hot summer.
