Italian Sausage and Tortellini Soup

Italian Sausage and Tortellini Soup
After spotting a few different versions of this recipe floating around Pinterest, I had to try making my own, because who doesn't love sausage and tortellini? This is a pretty hearty Italian soup and it's pretty healthy, super easy and did I mention PACKED with flavor? I made this today and my house smells amazing. So let's get started!
Ingredients for about 5 bowls:
1 Pound Hot Italian Sausage
4 tsp. Minced Garlic
5 Cups Chicken Broth
1 15 oz. Can Diced Tomatoes ( I used Fire Roasted)
1 8 oz. can Tomato Sauce
1 Tbsp. Italian Seasoning
1 Cup Sliced Carrots
1 Cup Sliced Mushrooms
1/2 Cup Minced Onion
1 9 oz. package refrigerated Cheese Tortellini
First, Cook the Sausage in a pan until the sausage is almost done, about 5 minutes. Then add the garlic and cook for another 2 minutes.
While that is going, slice up the carrots, mushrooms and onions.
Stir in the Chicken broth, tomatoes, tomato sauce, carrots, mushrooms, onions and italian seasoning. Cover and cook for 30 minutes, until the carrots are tender.
Stir in the tortellini and cook for another 10 minutes.
Top with a little fresh grated parmesan and crusty french bread and Enjoy!
