Instant Pot Leek Soup and Bacon
A rather click bait if you like real bacon, as the bacon on this following recipe is vegan-style bacon hahah PEACE! The bacon is made of rice paper, and of course, if you'd like to, you can just call it as rice paper chips :P Joking aside, they are pretty tasty snacks if you'd like to lessen your meat intake :)
This soup is comforting for sure, especially for our Canadian Winter (today it's -30 C here, le sigh).
Rice Paper Bacon
- Vietnamese rice paper (for fresh spring rolls)
Marinade
- 1/2 tbsp maple syrup
- 1 tbsp each molasses and nooch
- 1/2 tsp each of garlic powder, liquid smoke, smoked paprika powder
- 1/2 tbsp low sodium soy sauce
- enough water
Instruction
- preheat oven to 375 F
- pour a little water (1/4 c) on a plate
- grab one rice paper, quickly soak in water, place on a cutting board
- grab another one, do the same, and stack these two
- brush rice paper with marinade, flip over, and brush this other side as well, with clean kitchen scissor, cut into strips and place on parchment lined pan (if you cut the strips a little wavy, you would most likely achieve bacon look btw, am too lazy)
- bake seasoned rice paper for 4 minutes, rotate pan and bake for another 3 mins
Leek Soup
- 3 large leeks, discard the top green part and the roots, thinly sliced
- 3 large celery, thinly sliced
- 4 large potatoes, cut into cubes
- 2 tbsp olive oil
- freshly cracked black pepper
- Vegeta powder seasoning to taste
- 2 tsp garlic powder
- 1 box mushroom broth
- 2 c water
Instruction (I used Instant Pot but you can use stovetop)
- Heat oil, saute leeks and celery slices until soften
- Stir in cubed potatoes, garlic powder, Vegeta and black pepper
- Pour in broth and water, cover the lid, cancel saute and select soup, adding 5 more mins to the timer
- Once soup is ready, with immersion blender, puree soup and pour into serving bowl
Serve soup with crushed rice paper bacon and nutritional yeast :D
