Ice-cream Sandwich
A sweet bread with coconut flavour and a homemade vanilla ice cream with little pieces of chocolate together to make a great Sweet Sandwich!
The tin that I used is a round one, although, I would suggest to use a squared shaped one so when you cut your sandwiches you are not loosing anything!
Great for both kids and adults!
Supplies
Recipe for 6 sandwiches
For the Coconut Bread:
- 2 big eggs (or 3 small eggs)
- 75 gr of plain flour
- 75 gr of coconut flour
- 8 gr of yeast for sweets (or 4 gr of baking powder with 3 drops of lemon juice)
- 60 gr of sugar
- Lemon Zest
- Butter as needed
For the Ice-Cream:
- 300 mL of double cream
- 225 gr of condensed milk
- 20 gr of chocolate
- Vanilla flavour (either powder or liquid)
Prepare the Sweet Bread
Beat the eggs with the lemon zest using a hand mixer (you can also use a fork). The eggs are ready when foam is formed. Add the sugar and the yeast and continue to mix.
Add the two types of flour (Starting from the coconut flour) spoon by spoon whilst continuing to mix.
Cook and Let It Rest
When all the elements are well mixed prepare a tin. Spread some butter on the tin and place on top a baking paper. Pour the mixture in.
Using a squared shaped tin is easier then a round one!
Cook in the oven for 30 minutes at 180 C. If, whilst cooking, you see that the cake is burning, cover the tin with foil and continue to cook.
Cut the Sweet Bread
Let the bread rest up until is cold.
Cut the bread in two parts.
Prepare the Ice-cream
Start by pouring the double cream (cold) and whip it. Once ready add the condensed milk and the vanilla and continue to mix.
Add the chocolate (cut into small pieces) and mix it in the ice cream using a spoon. Do slow movements because otherwise the whipped cream can loose its form.
Place the ice-cream in the freezer for 30 minutes.
Build Your Sandwich
Once everything is cooled down add the ice cream in between the two pieces of bread and place it again in the freezer, covered in cling film, for 30 minutes.
You can leave the cake there up until you need to cut and eat the sandwiches!
Cut and Enjoy!
Cut the sandwiches and enjoy!!
Keep the sandwiches in the freezer and let them rest outside the freezer for 5 minutes before eating.
