Blend the Strawberries
Cut the tops off the strawberries and add the strawberries to a blender and blend until very smooth.
Do NOT add any extra liquid in the strawberries.
Run Strawberries Through Sieve
Push the strawberry mixture through a fine mesh sieve or a nut bag to remove the seeds and set aside.
Add Milk and Gelatin
Add the milk to a medium saucepan. Sprinkle the gelatin evenly over the surface and let stand for 10 minutes.
Add Sugar, Salt and Strawberries
Add the sugar, salt and pureed strawberries to the milk and gelatin mixture. Heat over high heat, stirring constantly, until the mixture reaches 135 degrees F (about 2 minutes).
Combine All Ingredient
Take it off the heat. Add the vanilla and heavy cream to a pitcher that has a spout and stir to combine then add the strawberry mixture and combine.
Set Over Ice Water
Set pitcher over ice and water. Stir frequently until the mixture cools to 50 degrees F (about 10 minutes).
Pour Into Ramekins
Distribute evenly among the ramekins. Cover with plastic wrap and refrigerate for at least 4 hours or overnight.
Enjoy!
