How to Make Apricot Jam

Is there anything better than a slice of bread, with apricot jam on a hot summer day?...nope. Well then lets pull out the jam and - wait a minute why not make the jam and the bread. Ingredients (for 5 full jars):

2kg Apricots.

2 Packages Gelfix.

700g sugar.

5 mason jars with lids.

Cut Apricots and Sterilize Mason Jar Lids

If you have a apricot tree, like me, you need to pick 2kg of apricots (I know...easier said then done.) If not then buy some at your local fruit market. Then wash them thoroughly. Lastly prepare your apricots by cutting them in half then those halves into thirds. (basically into sixths.)

Once that is done then put your mason jar lids into a pot of boiling water to sterilize them.

Mix With Gelfix

Put the 2kg of apricots into a big pot with two packages of Gelfix and four tablespoons of sugar.

Bring to Boil

Bring the mixture to boil, stirring constantly. Boil for one minute. Then blend with a hand blender.

Add Sugar

Add the 700 grams of sugar and stir. Bring to boil thoroughly again. Boil for 5 minutes.

Ladle Into Clean Mason Jars

Make sure that the mason jars are clean (I put them through the dishwasher) and ladle into jars. Turn them upside down for 5 minutes. Flip them upside up and listen for the pop that tells that they are closed tightly.

Basic instructions:

.1 Prepare 2kg apricots

.2 Place in pot with two packages Gelfix and four Tbs. sugar.

.3 Bring to Boil constantly stirring.

.4 Boil for one minute.

.5 Blend thoroughly.

.6 Add 700 grams sugar.

.7 Bring to steady boil.

.8 Boil for 5 minutes

.9 Transfer to jars and turn upside down for 5 minutes and flip back and listen for pop.
