You've built your 860 pound counter-weighted trebuchet, now what do you do with it?  (Sorry we didn't take photos as we were building!)  Probably the best activity is to find an old camping trailer that no one wants, invite all of your friends over, and spend the weekend bombarding it.  But it is also tons of fun to make pumkins and watermelons go SPLAT!  I have used the trebuchet to prepare my students for state assessments by having the class find the mean, median, mode, and range of the distance of its shots. You can even use it for "Bowling with a Trebuchet."  But another good activity is just to let your company play with it.
