How to Cook a Delicious Caramelized Pork
Hello,
I COULD NOT keep this recipe for me only. This is one of my favorite meal my mom used to cook.
When I left home (because of my studies), I felt a bit alone and sad, I was thinking about those happy family dinners that I would miss a lot. I don't know why (or I mean, now that I ate this amazing Caramelized Pork, I definitely know why) but the first dish I thought about was the famous Caramelized Pork.
When I asked her for the recipe, I was very surprised that it was so easy to cook such a tasty dish.
I think this recipe got the slow food concept right on. Eaten with rice, it is pretty close to perfect, irresistible...
You have to try it ! You would miss something in your life otherwise !
(This recipe should make enough to eat for 2 adults).

Tools + Ingredients
Tools :
-Any regular (old or not) pot
-A knife
-A tablespoon
-A wooden spoon
-A place to cut the ingredients
Ingredients :
For the meat :
-600g of pork
-1 onion
-1 tsp salt
-Your favorite color bell pepper (I choose yellow)
-3 tablespoons sunflower oil
-2 tablespoons of soy sauce
-70g of sugar
-Water
-40g of butter
For the rice :
-240g rice
-Water
-Salt
Cutting the Pork
I bought the Pork in big cube bits. Then I cut it into smaller cubed pieces (about 2.5x2.5 cm) and put it aside.
The size of your bits will get smaller after the slow cooking step.
Slicing the Pepper
Slice the pepper in half.
Use your fingers to pull out the seeds and innards.
Slice off thin strips lengthwise.
Line up the strips and slice across.
Slicing the Onion
To slice the onion,
Remove the skin,
Cut it in slices, keeping it packed in your hand
Turn it 90°
Cut again
Put this onion aside.
Frying the Meat
In the big pot, over high heat, fry the meat in the oil during 3 minutes.
Adding the Onion and the Pepper
Add the onion, the yellow pepper and stir gently over medium heat about 3 minutes.
Put aside.
Making the Caramel
In the same pot (do not wash it), make the caramel. If you followed correctly all the previous steps, you should be ready to move quickly on to the next step when this one will be done.
Combine the granulated sugar and tablespoons of water in the pot and set over medium heat.
As the sugar melts, swirl and gently shake the pan back and forth to distribute the liquid and make sure it melts evenly.
Now, all there is to do is wait and watch. In a matter of minutes, the sugar will change color from clear, to light amber, jump to the next step.
Adding the Pork, the Onion and the Yellow Pepper
As soon as the sugar get an amber/light brown color, add the pork (blended with the sliced onion, pepper).
Adding the Soy Sauce and the Water
Add 2 tablespoons of soy sauce as well as a small cup of water.
Adding the Salt and the Ground Pepper
Salt and pepper according to your taste (I put 2 teaspoons of salt and one of pepper). You can add salt and pepper later if you are not sure.
The Slow Cooking Step
All you need for this step is to wait and stir from time to time, about 1 hour.
Adding the Butter
Add the remaining butter and stir until the butter is totally melted. It will give the sauce the perfect taste ans texture.
Cooking the Rice
In a saucepan bring water and a teaspoon of salt to a boil.
Add rice and stir
Cover and reduce heat to medium low. You will know that your temperature is correct if a little steam is visible leaking from the lid
Cook for 12 minutes (The cooking time can depend on the rice you use, so I recommend you to check the good cooking time on the package.)
Remove the water surplus with a sieve if needed
Fluff the rice with a fork and let it sit for 2 minutes or so.
Dressing the Plates
Be creative (or not) ! I think the pictures are clear enough to illustrate the way I did.
Whatever your presentation, it will be delicious !
