  • ½ tablespoon of salt
  • 3 unsalted butter sticks, cold and cubed.
  • 2/3 cup of cold water
  • 1 egg

Method:

In a stand mixer equipped with a paddle attachment, combine flour, sugar and salt at medium-low speed (approximately 30 seconds). Increase the speed to medium and flow in cold water, followed by cold butter cubes, finally add an egg. Continue mixing at medium speed (about 2 minutes). Stop mixing just before the butter is fully incorporated (the dough will be scratched and the pieces of butter should be the size of peas). Transfer the dough to a floured surface and divide it into two balls. Flat each one in a disk, wrap it in plastic and let it cool for at least 1 hour.
