Habanero Apple Baby Back Ribs

Here you will find my family's favorite rib recipe.

Supplies

Ingredients:

1 rack of baby back ribs

Yellow mustard

Your favorite BBQ dry rub

Roasted garlic & herb seasoning

Hot sauce

1 stick of unsalted butter

4 Habanero peppers

1/2 cup Dark Brown Sugar

1 cup of apple juice

Heat Grill

Heat your grill to 225 degrees.

Season Ribs

I start by rinsing my ribs (personal preference). Coat the rack of ribs in yellow mustard then in hot sauce. Next add a generous amount of dry BBQ rub roasted garlic & herb seasoning. You want your ribs to be completely coated in seasoning. BE sure to coat and season all sides.

1st Round of Grilling

Put the rack of ribs on the grill bone side down. Cook at 225 degrees for 1 hour and 30 minutes.

Prep

Next you will need to prep for the second round of grilling. Slice the stick of butter into 5 equal slices. Slice your habanera peppers. (I wait until about 10 minutes before time to take the ribs off of the grill.)

Add Ingredients and Grill

Remove ribs and place in an aluminum pan meat side down. Put 1/2 cup of brown sugar on top of the bones. Place a layer of butter then a layer of habaneras. Put a cup of apple juice directly in the aluminum pan. Put the pan back on the grill and cook for another hour and a half at 225 degrees.

Finishing Touches

Remove the ribs from the aluminum pan and place back on the grill bone side down. Grill for an additional 30 minutes. This will tighten the meat back on the bone.
