Grilled Veggie Sandwich
Some of you may have Taco Tuesdays, Wiennie Wednesday or even a Fry Me an Egg Friday, but at our home... we have Meatless Mondays ! If you can make a simple grilled cheese sandwich, this recipe is for you. It's loaded with all kinds of yummy goodness that won't weigh you down, just serve with a side dish of fresh fruit and you are on your way to some good eating!
Supplies
Equipment you would use; Cast Iron Pan, Cutting Board, Knives, 2 Spatulas.
Ingredients ; Seeded Rye Bread, Butter, Mozzarella Cheese, Ranch Dressing, Salt/Pepper to taste, Any Vegetables you like to eat, today I am using : Tomatoes, Cucumbers, Red Onion, Green Pepper. Keeping it simple.
Washing Veggies
Here I have my tomato and green pepper in a vinegar/water bath to clean them before thinly slicing. Cucumber I didn't wash beforehand because I peeled off the skin, the red onion just peeled like normally you would do with any onion.
Slicing, Dicing and Buttering
Depending on how many Grilled Veggie Sandwiches you are going to make is when you decide how much to slice up. I am making only one sandwich here. Thinly slice up the tomato, cucumber, red onion, green pepper and the Mozzarella cheese. Butter one side of the Rye bread.
Putting It All Together Now
Lay the buttered side down of Rye bread on the cast iron pan and lay slices of cheese on it, then I added the veggies. First was the tomatoes, added a little salt/pepper. Next was the thinly sliced cucumbers, peppers, red onions. I did not start the stove yet until the whole sandwich was all together. Then drizzle the "secret" ingredient over the veggies. Ranch dressing. Over everything add another layer of thinly sliced Mozzarella cheese and cover with another buttered slice of Rye bread, buttered side facing you.
Grilling Time
Turn heat on low, if to high the bread will get burned before the cheese has a chance to melt. Watch heat and turn up a little when you see cheese melting. The aroma is filling the kitchen now and you may be salivating,,,, but wait. Turn over when Rye bread is brown, this is where you may need two spatulas , one in each hand to keep sandwich from falling apart on you... You can do it ! After both sides are browned, place on cutting board and wait for a few minutes before cutting the sandwich into two pieces.
Finally Eating Time
I like to serve this Grilled Veggie Sandwich with a fresh fruit side dish , just goes together well. Here in the picture the Strawberries are frozen, but that is okay they will thaw out before I am ready to eat the sandwich. And yes, there are two napkins beside the plate for a reason.... this is such a good sandwich and a messy one too that you will absolutely LOVE !
