Grater Coconut Cookies
Grater coconut cookies are one of my favorites year-round, especially during the holidays. The soft fluffy texture just melts away in your mouth, leaves you feeling as if every bite, is your first. If you are a fan of coconut, you'll love this as much as I do. I'm going to take you through the step so you too can enjoy the exciting flavors in less than 45 minutes, let's get started.
Supplies
- 2 Eggs
- Salt
- Granulated Sugar (1/2 Cup)
- Desiccated Coconut (2 Cups)
- Spatula
- Baking Tray
- Pyrex Bowl
- Oven
- Spoon
Preparing Ingredients
To start, we will take 2 eggs and separate the yolk from the white as we will only be using the egg white for this recipe. Next, we will add a pinch of salt and whisk the egg white until foamy. We then gradually add 1/2 cups of granulated sugar while mixing and whisk until you have a stiff creamy texture. We then add our 2 cups desiccated (grated and dried) coconut and fold in with a spatula until ingredients are evenly mixed.
Time to Bake
Take a scoop of the dough with a spoon. Wet your hands lightly and roll the dough into a ball then set it on your baking tray. Repeat this process until you have formed all of the dough into balls that are evenly spaced around the baking tray. Preheat your oven to 340F or 170C then place the tray in the oven and bake for 15 minutes, until golden brown. Remove the cookies from the oven and allow them to cool for 10 minutes. Now, all that's left to do is prepare yourself to be blown away by the amazingly creamy and fluffy texture, and uniquely awesome taste.
