Gluten-Free Banana Bread/Muffin Recipe
Banana bread is delicious and today you're going to learn how to make gluten-free banana bread. You have two choices when making this. The first one is banana bread or loaf which requires rectangular baking loaf pans. When it comes out, it will well, look like a loaf. The second one is banana muffins. This needs muffin shaped baking trays and cupcake paper. So now, let's get started!
Supplies
Wet Ingredients
- 3 Ripe Bananas
- 3 Eggs
- 1/2 cup melted butter or olive oil
- 1/2 cup Greek yogurt
- 1 teaspoon vanilla
Dry Ingredients
- 2.5 cups oats flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/2 cup sugar
Mash the Bananas
Get a medium-sized bowl and peel 3 bananas. Take those bananas and mash them (don't eat them!). You know when to stop mashing what there are no chunks. You can use the banana peels as compost for your garden.
Add Butter, Yogurt, Vanilla, Eggs
Take the butter, yogurt, and vanilla and add it to the mashed bananas. Then crack the eggs (make sure no eggshell pieces fall in) and dispose of the eggshells. Mix it very well until you can't see the separate ingredients. If you have some leftover yogurt you can add water (if it's watery then you don't need to) and some sugar (sugar is optional) to make lassi. Lassi is a popular Indian drink and its great for the hot days (best if served cold).
Add the Dry Ingredients
Take all the dry ingredients and at it to the bowl one by one. Also if you want, you could add things like apple sauce (that you would need to do in the step before) or chocolate chips or nuts. Next, make sure to mix it very well until you can't see the dry ingredients and there are no lumps.
Baking
If you are doing muffins, put cupcake paper in each hole. Put it in the oven for 350 F for 20 to 25 minutes. If you're doing loaf, put it in the oven for 50 minutes. Use a rectangular loaf pan. Now you're done! Enjoy your banana bread or muffin with some milk, tea, coffee, as a snack or just quick breakfast.
