Glazed Raisin Bun
You'll enjoy this bun for it's fruit and mild zest. It's a lovely lunch addition and sure to please the raisin fans in your house.
Ingredients
You will need:
- 500 grams of flour
- 1/2 teaspoon of salt
- 150 grams of sugar
- 1/2 teaspoon of ground cardamom
- grated rind of 1 lemon
- 200 mls Sourdough Starter
- 90 grams of butter
- 2 eggs
- 120 grams of raisins
In a bowl add the flour, sugar, salt, cardamom, lemon zest and mix together.
Well, Well, Well
Make a well in the bottom of your dry mixture the add the sourdough starter. Use your cake mixer dough hook to combine it.
Beg and Utter (I Mean Egg and Butter)
Beat the two eggs and add to the dough mix. Melt the butter then add to the bowl and mix.
Add Raisins and Currants
Remove your dough from the bowl and kneed flat. Add raisins and currants and kneed until combined.
Activate the Sourdough
Once you have shaped your dough into a ball, cover it and leave until morning. This will give time for the sourdough to activate throughout the dough.
Cut It Out
Cut your dough ball into three equal pieces and roll each into a ball.
Amazing Glazing
Place each ball into the same baking dish, deliberately squashing them together. Bake for one hour at 180C (360F) until golden brown and it springs back from the touch.
While your raisin bun is cooking, make your glaze by cooking one tablespoon of sugar and one tablespoon of water over a medium heat until the sugar is dissolved.
Complete
Remove your raisin bun from the oven and remove from baking dish, allowing it to cool on a rack.
Baste over your glaze and you're ready to serve.
