For the dough:

  • Wheat flour - 250g (all purpose flour will do)
  • Dry yeast - 1.5 tea spoons
  • Sugar - 3/4 tea spoon
  • Salt - 1 tea spoon
  • Olive oil - 1 tablespoon
  • Lukewarm water - 1 cup

Toppings of your choice.

  • Cherry tomatoes - 4 or 5
  • Olives - 4 or 5
  • Rosemary - half a sprig
  • Mushroom - 1 small
  • Sunflower seeds

You can add basil, thyme, pumpkin seeds, garlic, sun dried tomatoes, etc.

Mix all ingredients in a bowl. Add water slowly and knead for 5-6 minutes till the dough is springy and soft.

Cover and leave aside in a large bowl for 1.5 hrs in a warm place.

Shaping the Dough

After the dough has had time to rest and it grows in size, gently flatten and shape it. Do not roll, as that will remove all the air out. Make a few depressions with your fingers and leave aside for another 20 minutes.

Top It Up

Get your favourite toppings and place them on the dough, gently pressing them in to be captured by the dough.

Bake

Drizzle a bit of olive oil on the top and bake the bread in an oven for 30 minutes, that has been preheated to 180 degrees Celsius. Check the bottom before taking it out to make sure that it is not soggy. Allow to cool, slice up and enjoy.
