Fluffed Ice

How would you like to make your own fluffed ice with aquafaba? It tastes amazing, and it's vegan! This recipe is easy-peasy, and fun to make. The only machine you need is a blender and a freezer.

Supplies

Ingredients:

Fluff base:

- 3/4 cup aquafaba*

- 1/2 tsp cream of tartar or lemon juice

- 1 tbs vanilla extract (optional)

- 1 cup powdered sugar

Syrup:

- 3/4 cup vegan milk (I used soymilk)

- 1/4 cup canola oil or any other neutral-flavored oil

- Flavoring: (choose one)

Vanilla - 1 tsp vanilla

Fruit - 1/2 cup berries or fruit

1/4 cup cocoa powder + chocolate chips

1/3 cup peanut butter

1 tbsp instant coffee

*Aquafaba is made from cooked light bean liquid and acts very much like egg whites. You can either use it from canned light beans (soybeans, chickpeas, etc.) or cook the beans yourself for another dish and save the liquid. I used soybean aquafaba and made my own soymilk.

Beat Aquafaba

Take your aquafaba, and add cream of tartar or lemon juice (it helps the fluff keep its shape) and beat with an electric beater until stiff peaks form. You may use a hand whisk if you are ready for a full workout, but I don't recommend it. Afterward, add vanilla and powdered sugar.

Make the Syrup

Add the milk, oil, and flavor (I used mango) into a blender. Blend until smooth.

Combine and Freeze

Incorporate fluff and syrup, pour into a container, and freeze at least 4 hours.

Scoop and Enjoy

Use an ice cream scoop or spoon, and scrape off the fluff. Enjoy!
