Extreme Goodness in One Bite

Hey everyone, today I have this delicious cookie recipe to share, its chewy on the inside and crispy on the outside, they are super easy to make and all your family and friends will love them. They would also be a great homemade gift for someone that loves cookies :)

Lets get baking!

Ingredients

To make theses cookies you will need:

  • 2 cups flour
  • 230 grams butter
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp vanilla essence
  • 2 1/2 cups oats
  • 2 eggs
  • 1 cup white sugar
  • 1 cup brown sugar
  • 140 grams roasted peanuts
  • 140 grams currants
  • 200 grams apricots
  • 220 grams milk chocolate
  • 160 grams white chocolate

Note: you can change any of the nut/fruit/chocolate to what ever you want in your cookies to make it you own :)

Pro tip: If you don't have chocolate but you still want that chocolaty taste then add around 5 Tablespoons of Cocoa powder they turn out great this way.

Preheat your oven to 190 C or 375 F

Making the Scroggin and Oatmeal

In a large bowl mix together all the fruit, nuts and chocolate until well combined, next we want to blend our oats to make oatmeal, to do this use a food processor or blender to blend it up until it is fine.

Creaming

Add your butter and both sugars to a stand mixer, or if you are feeling brave you can do this by hand and then you want to cream them together until light and fluffy. Add your eggs and vanilla and mix again to combine. I am using a scraper attachment on my mixer but if you don't have one of these's you can just use a K beater.

Finishing It Off

Once the sugars, butter and eggs are well combined it is time to add the dry ingredients. Pour in the flour, oatmeal, salt, baking soda and baking powder then mix until combined. Next add in the pre mixed scroggin, This won't take long to mix in, 10 or so seconds.

Rolling

Take some of your cookie mixture and roll it into a ball. I made my cookies around medium size which made a total of 55 cookies, you can make yours any size you wish.

Baking

Add your cookies to a baking sheet covered in baking paper and using a fork push the cookies until they look nice, then put them in your pre heated oven to cook. They will take around 12-15 minutes until light golden brown, the longer you cook them the more crunchy they will be.

Time to Enjoy a Treat

When they come out of the oven gently put them on a cooling rack to cool completely. Once the cookies have cooled put them in an air tight container. These's cookies are also really nice frozen.
