Eggs in Purgatory (for Carnivores)
We are going to make a quick one pot/pan dish called Eggs in Purgatory.
This version adds minced meat, because I like this dish as an evening dinner instead of the breakfast food that this often is portrayed as.
It is a bit similar to huevos rancheros and shakshuka since it consists of a tomato sauce in which you slowly boil a few eggs, while listening to their screams, as souls trapped in purgatory.
Nothing like some dark thoughts to go with you cooking, am I right?
Let´s do this.
You will need the following,
INGREDIENTS:
- 5 eggs
- 2 small or one large white onion
- 2 cloves of garlic
- minced meat, in this case the insides of 3 sausage
- 2 tins of 400g of chopped tomatoes
- tablespoon of butter + a schpritz of olive oil
- salt and peppar
- optional: balsamic vinegar ( not shown in the picture because he is camera shy)
Supplies
One large frying pan with a lid
Kitchen knife
Crime scene for your slicing and dicing, also known as a cutting board.
Go All Jack the Ripper for a Minute
Peel the onion and release your knife skills on it, chop finely.
To get the peel of the garlic I like to lay the flat of the blade on it and give at quick smash with the palm of my hand, this releases the whole clove from its wintercoat.
Similarly, slice them thinly.
Then get the sausages and remove the casing from them, releasing the lovely flavoured minced meat
from the inside. Save for later.
Time to get the pan on and turn the stove up to 11.
Fry All the Things!
Add the butter and oil to the pan and light the devils fire under it´s bum.
The butter is there mostly for taste and the oil keeps the butter from burning at this stage.
When the pan is hot, add onion and garlic and fry for 3 minutes on high, afterwards
turn the stove down to a medium and add the minced meat.
Fry all these things for about 4 minutes until the meat has browned.
Tomato Tin Time.
Now add both tins of tomatoes, stir everything together and bring to a boil.
now is the time to add some balsamic vinegar if you are Balsamically Inclined, if not it will taste just as good.
If possible, get a small child to help you stir the pan, they work for free and are very enthousiastic, although only for a few minutes before they return to catapulting Playmobil across the living room.
When everything is bubbling turn the stove down to a comfortable simmer, pop the lid on and leave for 15 minutes and really let our purgatory take shape before the poor harmless eggs will get thrown in the volcano.
*evil laugh* MUHHAHAHahahahaha
Sacrifice to the Gods
After 15 min the sauce should be thickened up.
Have a taste and add salt and peppar at this point to your own liking.
Using a spoon or ladle make small divot in the sauce and crack an egg in it.
Do the same for the 4 other ones, so they all cook approximately the same amount of time.
Now, depending on how you like your eggs and how much of a sadist you are, you can leave them bubbling
in purgatory for a few minutes more or less ( just like you would when boiling them in water)
You will see the whites start to set and I chose to serve them after 6 minutes.

Done diddely done.
You can serve this with some flatbread and turn them into improv burrito-like rolls.
or eat them straight from the pan like savage.
