Easy Pancake in Mug

Hi, I'm going to show you how to make a really easy pancake in the mug that is just as good as making it on the stove top. It takes a couple minutes to make and it's soooo yummy.

Ingredients

Ingredients:

  • 1 Tbsp Melted Butter
  • 5 Tbsp Pancake Mix
  • 3 Tbsp Milk
  • 2 Tbsp Sugar (could do 1 Tbsp if you don't want it too sweet)
  • Pinch of Salt
  • Vanilla to taste
  • Toppings (optional)
  • Mug (I have done this recipe in small, 8 oz mug)

Melt the Butter

First, melt the butter in the mug for 30 seconds. I had time in the morning, so I did brown butter. To brown the butter, I put a microwave save plate on top of the mug and microwave the butter for 6 minutes, the longer you microwave it the darker it gets. Browning the butter on the stove top would be a much faster approach, but I wanted to try something different. If the mug gets really hot, then I recommend using a new mug in the next step, or cooling down the mug in a cold water bath. Not doing so, would make the pancake mixture start "cooking" and the ingredients won't mix properly and you'll end up getting lumps in the mixture.

Mix in the Ingredients

Mix in all the ingredients into the mug. Since everything is in tablespoons, you can use the same measuring spoon. If you noticed from the picture above the mixture is a light brown color, that is because I used Mexican vanilla. There is not a huge difference in taste from other vanilla, but it's a bit stronger than the other brands.

You can add toppings inside if you want, I opted to put chocolate chips in the mixture.

Microwave It

Place mug in the microwave for 1 minute. When done, insert a toothpick to see if it's cooked through, if not, place it back in the microwave at 10 seconds intervals until it's cooked. If you over microwave it it gets dried out. In smaller mugs, the mixture gets cooked quicker, so I recommend starting at 45 seconds, then go from there.

Tip: Be careful when handling the mug, it can get really hot.
