Easy Oatmeal Almond Butter Mug Cake
Hey everyone! Today I wanted to show you how to make this super easy mug cake. I really love making mug cakes but they often turn out slimy or dry and hard. However, this recipe is absolutely perfect! The consistency is awesome, plus, it's healthy so it makes a great snack!
Recipe
1. 3 tbsp almond milk
2. 1 tbsp olive oil
3. 2 tsp cane sugar
4. 1 tsp honey
5. 3 tbsp gluten free flour
6. 2 tbsp rolled oats
7. 1 tbsp chopped pecans
8. 1/4 tsp baking powder
9. 1/4 tsp cinnamon
10. 1/4 tsp vanilla extract
11. 1/8 tsp nutmeg tbsp almond butter
Whisk
In a large mug, mix together the almond milk, olive oil, and sugar with a fork.
This will help combine your base ingredients just so that it's easier later on.
Mix It All Together
Now you can add in all of your other ingredients.
The nutmeg, cinnamon, and pecans are optional, but I think it gives the cake a really good flavor so I would recommend including them.
(Make sure the nuts are chopped finely)
Add a Dollop !
Now you can add a little spoonful of really whatever spread you want. I chose almond butter because it's a really healthy option and it adds to the nutty flavor.
However, you can also use peanut butter, nutella, etc.
Gently place the spoonful of your spread into the middle of the cake and push it down slightly so it is just a little submerged but still poking through the top.
Bake
Put the mug in the microwave for 1 minute on full power.
Add another 30 seconds then check the consistency with a toothpick. If it is still not completely cooked all the way through, add 30 more seconds.
Add Toppings
After baking it, your cake should look similar to the picture above!
I like to add about another tbsp of chopped nuts on top of the cake as a little garnish.
