Easy Chicken Quesadillas - Taco Bell Copycat Recipe
I just love the Taco Bell Chicken Quesadillas. Particularly the sauce. In the past, I've tried to recreate them by making the sauce from scratch and always had issues (mostly didn't have the tons of ingredients people said you needed). Recently, I saw a Taco Bell Chicken Quesadilla kit in the store and was stoked! Then I saw it was just tortillas, the sauce, and Velveta cheese and realized, I could do this! And also realized that they just sell the sauce you need right in the store! So I got that and wanted to share my process! I also leave out the Velveta because, even as a cheese lover, it was too much to me.
This Instructable is how you can very quickly and easily make a copycat Taco Bell Chicken Quesadilla at home!
Supplies
Ingredients: This is for 2 Quesadilla
- 2 Tortillas
- 1 Cup Cooked Chicken
- 1 Cup Shredded Cheese (I'm using cheddar)
- about 1 tsp Taco Seasoning
- Taco Bell Creamy Chipotle Sauce (you can find home recipes for this, but I found this worked just as well)
- Toppings? Add any of your favorite toppings such as lettuce, tomatoes, sour cream, or salsa, after it's cooked.
You'll need various kitchen tools for cutting the chicken, shredding the cheese, and then cooking the Quesadilla on a frying pan.

Prep Ingredients
Start by prepping your ingredients.
Chicken:
If you are going to make your own, cook that first. Then cut it up and add taco seasoning to it. You can add little by little to see how much you need. I measured out a tablespoon, but only used about 1 teaspoon.
Cheese:
Shred your cheese.
Assemble Quesadilla
Assemble your Quesadillas!
I started by spreading the sauce over the whole tortilla.
Then, I added about 1/2 cup of chicken and 1/2 cup of cheese to just one side of the Quesadilla.
Fold it in half and finish all that you'll be making.
Cook Quesadilla
Heat up a frying pan that will fit your Quesadilla. I did about medium or medium low heat. You want to grown the tortilla and also heat up everything inside. So you don't want it to heat up too fast on the outside.
Brown both sides trying to keep everything in.
