Easy Brownie Cookies
You want an easy recipe for brownie like cookie that can be done in a flash?
The base cookie require 3 ingredients, but I include optional toppings
Tools
Baking sheet
Parchement paper
Mixing bowl
Portion scoop (optional)
Ingredient
1 box brownie mix ( I used duncan hines, but you can use your favorite mix)
1/4 cup vegetable oil (you could use melted butter)
2 eggs (beaten)
1 tablespoon espresso powder (optional)
Optional toppings
White chocolate chunks
Pecans pieces
Crushed candy cane
Preparation Steps
Line the baking sheet with the parchement paper.
Preheat oven to 350F. ( if using convection, preheat oven to 325F)
Mixing the Batter
In a large mixing bowl, add the brownie mix, the eggs and the oil.
If using , add the espresso powder.
Mix until the brownie mix is incorporated.
If using the white chocolate as a topping, put 1/4 of the mix in a seperate bowl and add about 1/4 cup of the white chocolat chunks.
Scooping the Cookies
Drop portion of about 1 tablespoon of cookies spaced by about 2 inches ( the cookies will spread)
If you have an ice cream portion scoop, use it, it will give you even sized cookies.
After I portioned the cookies, I added the optional toppings.
Baking the Cookies
Put the cookie sheet on the middle rack for 8 to 10 minutes.
8 minutes will give you fudgy cookies, 10 minutes will give you cookies with a crispy edge.
Once cooked, leave the cookies to set on the baking sheet on a cooling rack for 20 minutes.
Enjoying the Cookies
Peel off the cookies from the parchment paper and plate them!
Enjoy them with milk and share them with loved ones!
