Easy Almond Shortbread Wedge Cookies
I've made a lot of different types of cookies the past couple of years, yet I've never made shortbread cookies until now. And I think they turned out really good! I also wanted to make these for national cookie day, which was december 4.
Yields 2 circular cake pan sized cookies.
Supplies
2 cups of flour [ If you want to make these Gluten free, add 1-2 tbsp of milk to the dough mixture ]
1 cup of refrigerated [ not frozen ] butter [ 2 sticks ]
1 cup of granulated sugar
1 egg
1/4 cup of cornstarch
2-3 tbsp of almond extract or 2 tbsp of vanilla extract
1/4 tsp of salt
**Items below are optional
Coarse sparkling sugar
Sprinkles
Chocolate chips
Frosting
And whatever else you think might be good in/on these cookies
Stand mixer
Spatula
Parchment paper
2 circular cake pans
Melting the Butter
Cut the 2 sticks of butter into cubes, and put them into a microwavable cup or measuring cup.
Put the butter in the microwave for 20-30 seconds.
You only want the butter to be slightly melted.
Maxing the Butter and Sugar
Pour the slightly melted butter, sugar, salt, and almond extact into the stand mixer's bowl.
Put the mixer at low to medium speed until the butter, sugar, salt, and almond extract becomes like it's own dough, I guess you could say.
Use the spatula to get any big clumps of butter off the beaters.
Making the Dough
Add the flour, cornstarch, and egg to the butter mixter.
Put the mixer at low speed until all the ingredients form a cookie dough.
If you dough is too wet, add a tsp of flour.
Flattening the Dough
Place the dough on a floured surface.
Cut the dough ball in half.
Putiing the Dough in the Pans
**I only put the spoons in the pan so the parchment paper would stay down...
Preheat oven to 325 F.
Line the pans with parchment paper.
Put one ball of dough in each pan, and press the dough in the pan until flattened.
Grab a fork, and press it into the dough in multiple places in both pans.
Decorating the Cookie [otional]
Put sprinkles, chocolate chips, or anything else you think would be a good topping.
You may need to poke some more holes in the dough with the fork, if some were filled in.
Baking Time!
Put the pans in the oven for 20-28 minutes or until tooth pick inserted in and comes out clean.
Letting the Cookies Cool
*Otional* Sprinkle coarse sugar over the cookies.
Once the cookies are fully cooked, transfer to a cooling rack.
When the cookies are fully cooled, carefully take the parchment paper off.
Enjoy!!!
Cut the cookie and serve!
You can put frosting on the cookies or try not cutting the cookies, and putting ice cream in between the 2 large cookies, then cutting them. It would be like a giant cookie sandwich!!
