EASY! Peanut Butter Energy Bites

These are an incredibly delicious energy-packed snack! We love to eat them after we run, for breakfast, and all day!!! Chia seeds are high in nutrients and the oatmeal and peanut butter keep us feeling full!

Ingredients

1 cup oatmeal

1 cup peanut butter (crunchy or creamy)

1/2 cup chia seeds

1/2 mini chocolate morsels

2 Tbsp honey

Mix

Mix all ingredients together in a large bowl. We find that mixing the peanut butter, chia seeds, and honey first helps the balls stick together. Feel free to be extra generous with the honey and peanut butter! (We secretly use ~3 Tbsp honey)

Refrigerate

Stick the energy bites in the fridge for 15-30 minutes. This allows them to harden and makes it easier to roll into bites.

Roll Into Balls

Take them out of the fridge and roll into balls! It usually makes ~12 energy bites (but you can make them as big or as small as you like).

Once you have formed them into perfect little energy bites, it's time to enjoy! Store in the fridge for up to a week :)
