Devil's Jam
Devil's Jam is a sweet tomato and chili jam.
It is delicious with cheese (especially goat cheese and parmigiano), meat or even on top of a pizza.
You can easily make your jam as Devilish you want by adding more chili or by using a hotter variety of chili. But even the mild variety creates really tasty combination.
This recipe is very mild, but be brave and use more chili if you dare!
Step 1: Collect All Ingredients
For Devil's Jam you need:
- 1 onion
- 2 red peppers (red bell is bit boring, but we used that for a filler because it is cheap. Use sweet variety for improved taste)
- chili (as much as you dare, we used 5 small ones and got very mild jam)
- 500g of crushed tomatoes (or fresh tomatoes)
- 1 tea spoon of salt
- 1 tea spoon of black pepper
- 2 tea spoon of oregano
- 3,5 dl of sugar
- 0,25 dl of apple vinegar
- 0,5 dl of water
Step 2: Chopping Time
Cut peppers, chili and onion into small cubes. Remove seeds from the peppers and chili.
The white part of the chili is very hot but not very tasty. You probably want to remove that part. Seeds make the structure unpleasant so removing them is recommended.
Remember, sharp knifes are safe knifes!
Important: Don't touch your eyes after cutting the chili!
Step 3: to the Pot...
Take a deep kettle.
Put crushed tomatoes and add the water and the spices. Put the kettle on the stove and start to heat it gently with low heat.
Add pepper, onion and chili.
Boil for 30 minutes with low heat.
Step 4: Sweetening the Things Up
Take the sugar and vinegar and add these to the pot.
Adding sugar will cool the mixture so mix it well and let the jam boil a bit more. After adding the sugar the jam can easily burn, so you can simply stir the pot all the time until the jam is boiling again.
Step 5: Canning
Take as many jars you need. Clean them well and "heat treat" them for example by filling them with boiling water for a while.
Fill the jars with Devil's Jam and close the lids.
You can turn the jars upside down on the table to see if they are sealed well. Let them cool this way.
When cooled down you can store the jam in cool and dark place. The jam usually lasts couple of weeks because you eat it right away, but actually I believe they would be eatable through the whole winter if stored properly.
Step 6: Enjoy!
Use Devil's Jam with cheese, meat, ice-cream, pancakes, bread... Devil's Jam goes almost with anything.
Pro tip: You can also make yellow Devil's Jam by using yellow tomatoes, yellow peppers and yellow chili... Or green with green variety but this could be bit sour because green peppers and tomatoes are not actually ripe yet.
