Devilled Chicken (Spicy Chicken Satay)

If you like grilled meat, if you like spicy foods, try this one! (This satay can be done over broiler grill, bbq, or over hot ember of charcoal).

Ingredients and Method

1/2 c cooking oil preferably olive oil

1 lemon, grate the rind and squeeze for the juice

1 tbsp mince garlic (store bought)

2 tsp dried red chilies (store bought)

salt and pepper as needed

enough skinless, boneless chicken breast (like 12 breasts at least) - sliced into 3-4 pieces per breast

Mix all well in a bowl and marinade chicken slices overnight.

Soak bamboo skewers in water overnight (no need to do this if you are using metal skewers).

When ready to cook, thread chicken onto skewers and grill/bbq until cooked (tender) for 6-8 minutes (turning frequently)

Serve immediately with salad and warm rice or as is. Enjoy~
