Delicious "healthy" Belgian Frangipane!
Hi everyone! This is a recipe for my absolute favorite cake: frangipane. My grandma sells it in her restaurant, and whenever I visit her, I ALWAYS eat a piece. However, it’s very sweet, the dough being almost syrupy, so I changed it a little bit to make it slightly healthier. I hope you like it as much as I do!
Ingredients for 1 BIG cake:
- 250g of butter
- 250g of applesauce
- 8 egg yolks
- 8 egg whites
- 200g of granulated sugar
- 200g of coconut blossom sugar
- 500g of ground almonds
- 50g of flour
- 1tsp of baking powder
- 2 rolls of puff pastry
~20cm cake tin
Ingredients for sugar frosting (optional):
- Few drops of water
- 250g of powdered sugar
Preheat the oven and let it warm up to 175°C
Using a stand mixer with paddle attachment, mix together the sugar and egg yolks. Let the mixer turn for a long time, until the mixture is smooth.
Now, add in the butter and apple sauce and continue mixing.
Next, slowly add the flour and the ground almonds to avoid it rising back up and making a mess. Again, let it blend for a long time so that everything is mixed together well.
Follow this up by beating up the egg whites, this time using the wire whip attachment, and carefully add it into the rest of the dough.
Roll out the puff pastry into the baking form. Cut out any excess coming out from the edges. This can be used for later. Prick holes in it with a fork, to avoid it puffing up while in the oven. Pour the dough on top of it and smooth it out
Cut the extra puff pastry in shapes and put it on top of the cake. The most common way to do it is to cut it into strips and put them crossing over one another.. However, any other shape, such as stars, hearts, circles, etc. also works
Bake the cake in the oven for 30 minutes.
Once the cake has finished baking, let it cool down. If you want, mix together some powdered sugar and water to make sugar frosting that you can put on top.
