Delicious Coconut Macaroons

These coconut macaroons are not only delicious, but good for you! Coconuts have natural sweeteners, so make ure that you use unsweetened shredded coconut, since we will be adding some sugar to the mixture. Without further adieu, let's get started!

Ingredients

For this recipe, you will need:

6 egg whites

3/4 cup sugar

4 1/2 cups unsweetened shredded coconut

2 tsp vanilla extract

A pinch of salt

Toasting the Coconut

Preheat the oven to 350 degrees F. Place the shredded coconut onto a baking sheet to toast it. This gives the macaroon a flavor even more coconutty! :-) You can omit this step, but it helps bring out the coconut flavor. Toast until just starting to color, then remove and let cool for a few minutes.

Making the Egg Mixture

To make the egg mixture, combine the sugar, egg whites, vanilla, and salt together in a large bowl. Mix together until the mixture is frothy and a pale color.

Mixing It Together

Add the coconut to the egg mixture and mix with a spatula until well combined. Make sure that all the the coconut is well moistened.

Bake and Enjoy

Form balls about 1 1/2 inches in diameter and bake for about 15-20 minutes, or until golden brown all around.
