Creamy Tuscan Tortellini Soup
This one-pot meal is so easy and budget friendly. It is full of flavor and perfect for those chilly nights. This comfort meal is perfect for any occasion!
Supplies
- 1 20 oz bag of tortellini
- 1 lb ground Italian sausage (Can be substituted for chicken)
- 42 oz chicken broth
- 1 32 oz can crushed tomatoes
- 2 14.5 oz cans stewed tomatoes
- 1 medium yellow onion, chopped
- 3 cups baby spinach
- 1 1/2 cups heavy whipping cream
- 3 tbsp minced garlic
- 1 tbsp garlic powder
- 1 tsp crushed red pepper flakes (optional)
- 2 tbsp Italian seasoning
- salt and pepper to taste
- 1 dutch oven
Brown the Meat
- Brown the meat and chopped yellow onion.
- Drain the grease after the meat is cooked.
- Adding the onion during this step is optional. You may add it later if you wish. I prefer this way because it brings out the flavors more.
Combine
- Combine the chicken broth, spinach, crushed tomatoes, stewed tomatoes, and the seasonings to the meat and onion mixture.
- Bring these ingredients to a boil and then let simmer for at least 30 minutes. This will allow plenty of time for all of the flavors to come together.
Add Pasta
- Add in the heavy whipping cream and the tortellini.
- It is important to add the tortellini 5-7 minutes before you are ready to serve. Nobody wants soggy pasta!
Garnish and Enjoy!
- Garnish with some freshly shredded parmesan cheese paired with garlic bread sticks.
- You now have a yummy soup to eat. Enjoy!
