Creamy Crab Mac

This Creamy Crab Mac dish is easy to make and clean up using a box of Macaroni and Cheese. Leftovers keep nicely in the refrigerator for about a week and make handy, tasty lunches. You can eat cold or warm it up in the microwave. If you want a gluten free version you only need to substitute a box of gluten free Macaroni and Cheese.

Ingredients:

  • 1 box macaroni and cheese dinner
  • 3 tbsp. milk
  • 3 tbsp. unsalted butter
  • 1/2 cup mayonnaise (can substitute sour cream, cream cheese or plain Greek yogurt)
  • 1/2 tsp. dry mustard (can substitute Dijon mustard)
  • 1 tsp. lemon juice
  • 1 8-ounce package imitation crab meat (can substitute leftover shrimp, scallops or imitation lobster)

This makes 2-4 servings.

Supplies

  • a 2-cup measuring cup
  • a 1/2 cup measuring cup
  • 1 teaspoon
  • 1/2 teaspoon
  • 8 cup pan
  • stirring spoon

  • Boil water
  • Add box of macaroni
  • Cook
  • Add butter. Wait to melt.
  • Add milk.

  • fold in mayonnaise
  • fold in mustard
  • add lemon juice
  • stir until creamy
