Creamy Avocado Fudge Pops

Avocado fudge pops are a slightly healthier take on a fun summer favorite. They're very fudgey and incredibly creamy. Personally, I prefer these over any store-bought fudge pop any day. What's even better, these fudge pops are only five ingredients, the recipe makes three large pops, and they come in at about 200 calories a pop. (I said healthier, not healthy)

Supplies

Two Halved Avocados

1 Tbsp. Vanilla or Peppermint Extract

1/4 Cup Honey or Maple Syrup (Vegan)

2 Tbsp. Cocoa Powder

1/4 Cup Almond Milk

Blender or Food Processor

Dixie Cups or Popsicle Molds

Popsicle Sticks

Peel the Avocados

Using a spoon, scoop out all of the delicious avocado meat and place directly in the blender.

In order for the fudge pops to be smooth, blend the avocados separately. This will remove any chunks that could end up in the pops. You may have to use a spatula to scrape down the sides and make sure there aren't any chunks left behind. The consistency of the avocados after blending should be similar to baby food.

Add the Rest of Your Ingredients

Add the milk, honey, cocoa powder, and vanilla or peppermint extract. I prefer using vanilla extract, but don't get me wrong, these pops are still delicious with peppermint.


Blend these ingredients together until well combined. Your mixture should be the same consistency as chocolate pudding.

Fill Your Molds

I'm just using Dixie cups, but if you have popsicle molds, I would suggest using them for the full effect. Once filled, aggressively tap them against your counter. This removes large air pockets from the inside of the pop and makes the bottoms of the pops even.

Once you've tapped out all of the air, place a popsicle stick in the center of your fudge pop.

Freeze

Your fudge pops!

Place them in the freezer and let them sit for at least six hours. Sorry, you have to be patient. The less you check on them, the faster they freeze.

Once your fudge pops have fully frozen, you can take them out of the freezer. To remove them from their molds, run them under hot water for a few seconds and push up on the bottom of the mold. Pulling the pop up from the stick usually just takes the stick out, but don't worry, you still have a delicious frozen treat!
