Coconut Almond Caramel Cookies
Does a better combination than coconut, almond and caramel exist? The rich flavor of almond and coconut with that gooey caramel are meant to go together like soulmates. I cannot describe it in words, its like love. With the first bite my heart goes "mmmmmm". I don't bake cookies much, but whenever I do, I always make these cookies. These cookies are super easy to make, requires very less time and can be made with few ingredients. My family loves these cookies even more than the basic Choco chip one. So are you ready to begin the sweet love affair of Caramel and Coconut?
Supplies
- All Purpose Flour.
- Sugar.
- Butter.
- Egg.
- Almonds.
- Desiccated coconut.
- Salt.
- Caramel toffees.
- Heavy Cream.
- Vanilla Essence.

Roasting
- To get the proper flavour of the coconut, we need to dry roast it.
- Line a baking tray with Butter/ Parchment paper.
- Spread 3/4 cup of desiccated coconut.
- Preheat the oven at 180 degree celcius.
- Bake it for 4-5 minutes.
- Let it cool down.
Chop Chop
- Take 1/4 cup of almond.
- Finely slice/ Chop it.
- Do this carefully and don't hurt yourself like I did.
- Keep this aside since we will need it later in the process.
Make Almond Coconut Paste
- In a grinding jar, take 1/2 cup of almonds and the roasted desiccated coconut.
- Add 1-2 tablespoon of water and make a paste.
Beat Softened Butter
- In a big bowl, take 1/2 cup of unsalted soft butter.
- Don't take melted butter.
- Beat it for 3-4 mins with a whisk or an electric beater.
- Beat it till it's nice and soft.
Sweetening (Ishqe Di Chashni)
- Take 1/2 cup sugar in a grinding jar and make fine powder of it.
- Into the butter, add the powdered sugar.
- Beat well till the sugar and butter is combined properly.
Goodness of Egg
- Add 1 egg and beat it with the butter and sugar.
- Add 2 tablespoon of vanilla essence.
- Mix everything well.
Almond Coconut Love Affair
- Add the almond coconut paste.
- Mix everything well.
Kneading
- Add 1 cup of all purpose flour.
- Add 1/2 teaspoon salt. (As per taste)
- Knead it for a few minutes.
- Make a soft smooth dough.
Shape of Love
- Line the tray with parchment paper.
- Make small dough balls.
- Make a small well for the caramel filling.
- Place the dough balls on the baking tray.
Just Chill
- Once ready, let it chill in the freezer for about 20-30 minutes.
- After 20 minutes, remover the tray from the fridge.
- Mix desiccated coconut and the chopped almonds in a bowl.
- Try to stick the mixture it to the dough and just sprinkle some from the top.
Preheating
- Preheat the microwave at 180 degree Celsius.
Baking
- Once preheated, bake the cookies for 15-17 minutes.
- You will feel that it is undercooked, But Let it cool.
- Once cooled it will become hard as a cookie should be.
Caramel Cream
- In a saucepan, Take 10-12 caramel toffees.
- To that add 5 tablespoon of heavy cream.
- Melt the caramel toffees with the cream.
- Add more cream if needed.
- Keep stirring and don't let it stick to the bottom of the pan.
- It should be of medium flowy consistency.
Get Set Go
- Our cookies are baked and caramel cream is ready.
- Let's bring it together.
- Add a spoon of the caramel cream into the cookie well we made.
- Let it set for 5-7 minutes.
Ready
