Cilantro Rice Burrito Buffet: DIY Chipotle's
We've always like Chipotle's Burrito Bowls, and had a hankering for one the other night. We happen to have what looked like most of the essential ingredients, so we decided to give it a shot. Chipotle move over. We got this, and it's a tasty, quick and easy dish for a summer family or party meal!
There's obviously a lot more on the buffet line here than cilantro rice, but it's the cilantro and lime rice that gives the dish such a distinct flavor, and takes out of the realm of plain old burrito night.
Ingredients
1 lb ground beef
1 - 15 oz. can black beans
1/2 cup corn
1 onion
1 garlic clove
Rice
Olive oil
Apple cider vinegar
lime juice
Chili powder
Salt
Pepper
Taco bowl or tortillas
Prepare Meat
Dice your onions and mince your garlic, and saute both in olive oil over low heat. Add ground beef when onions and garlic are tender and translucent. Break the ground beef up into a fine texture as it cooks.
Add chili powder, salt and pepper to taste.
Make Black Bean and Corn Salsa
While your meat is cooking, dice up another 1/4 cup of onion, and mix it together with:
1/2 cup corn
1 - 15 oz. can of black beans.
2 tablespoons olive oil
1 tablespoon apple cider vinegar
1 teaspoon cilantro
Prepare Rice
Add to two cups of cooked rice
2-3 tablespoons of lime juice
3 tablespoons of dried cilantro, or an 1/8 cup fresh cilantrol
Build Your Burrito Buffet
Arrange your cilantro rice, ground beef, black bean and corn salsa, and assorted condiments (guacamole, sour cream, tomato salsa, cheese) buffet style.

Layer up a taco bowl shell with rice, beef, black bean and corn salsa, cheese and your assorted toppings and have at it!

Or layer up the same assortment on a tortilla, and roll up for a super cilantro rice mega burrito!
