Christmas Tree Cookies
Sugar cookie trees are easy to assemble and are made with basic sugar cookie and tinted green with food coloring and "glued" together using icing sugar.
Supplies
650 Grams All-purpose flour
1/2 tsp. Baking Powder
1/4 tsp. Salt
240 Grams (2 sticks) unsalted butter, at room temp
180 Grams Granulated Sugar
1 Large Egg
Green Food Coloring
230 Grams Icing Sugar
20 Grams Coco Power
Round Cookie Cutters
Star cutter or hand cut them (a little tricky but still works)
Baking Parchment or silicone baking mats
Knife
Weigh out the flour, baking power and salt and add into a large bowl, whisk together the flour, baking powder and salt.
In another bowl, add the butter and sugar and using a electric mixer or hand whisk, beat the butter and sugar until light and fluffy. Then beat in the egg.
Take 1/5 out of the bowl and add into a clean bowl. (This bit will be for the tree trunks)
Add 110 Grams of the pain flower mixture and add 20 grams of the coco power to the bowl with 1/5 of the mixture in and mix until combined.
In the other bowl with most the mixture in, gradually add the remaining flour mixture and mix until just combined.
Divide the plain dough into 4 portions and wrap in cling film. Wrap the coco dough also and set all 5 portions into the fridge for at least 30 minutes.
Take one portion of dough out of the fridge at a time and add your food coloring to each one (Only 3 of them, leave one plain as this is for the stars and don't add any colouring to the coco one), making sure to have multiple hues of green. Start with a light shade and adding more coloring for a darker shade.
Once you have added the colouring set in the fridge again for another 30 minutes.
Take out all the dough portions from the fridge. Start to roll out each piece to a thickness of 1 cm.
Take your cookie cutter making sure you have three decreasing sizes and cut out a even amount of each size.
Roll out your coco dough into a rectangle and then cut it into even strips then cut it into little rectangles to your desired size (so it looks in proportion with your circular pieces)
Roll out your one plain dough and cut or stamp out the stars.
Bake all the dough pieces making sure to watch the smaller ones as they will cook quicker, they should take around 10 minutes. Once slightly golden brown remove from the oven and leave to cool.
Now it time to assumable the tress !!
Make your icing sugar - Add all the ice sugar to a cup and add a tea spoon of water at a time until you get a thick "glue" like texture.
Take two rectangular coco pieces and add a blob of icing sugar to one and sandwich the other piece on top. Do this for all your coco pieces and set aside to dry (around 15 minutes)
Use two of the large cookies and add a blob of icing sugar to the one and add the other on top.
Apply the same method to the medium and small cookies.
Once you have all the large, medium and small cookies "glued" together its time to stack them all on top of each other.
Take a large cookie stack and add a blob of icing sugar to the top one and then add the medium cookie stack and then add another blob of icing sugar and add the small cookie stack. Do this until you have used up all your cookies, let the icing sugar dry for around 15 minutes.
Once the stacks have dried its time to add the trunk and star, take your coco piece and add a blob of icing sugar and sit the "tree" cookie stack on top and allow to dry again for 15 minutes. (You might need to use something to help them stand up, I simply use a cup and place them around it so they don't fall over if they are a little wonky).
Add a blob of icing sugar to the two tips of the star and place carefully on top of the tree and allow to dry.
Once everything is dry your all finished !! You can display your Christmas tree cookies as you wish or just eat them straight away. I love to cook theses for my family around Christmas time as its a fun and easy recipe to bake.
