Chocolate Tortilla Ice Cream Enchilada
Made this wonderful discovery at a small, hole in the wall cafe in Albuquerque, New Mexico. Of course the chef wouldn't reveal her secret, but I searched for chocolate tortilla recipes and have to admit this dessert is pretty close to hers!
Ingredients
Chocolate Tortilla
1/2 cup flour
1/2 cup sugar
3 tablespoons unsweetened cocoa
1/4 cup milk
2 eggs
1/4 cup vegetable oil
1 teaspoon vanilla
dash of salt
Filling
ice cream (any flavor)
Garnish
chocolate syrup or sauce
fresh strawberries

Mix Ingredients & Set Aside for 2 Hours
Combine ingredients and hand mix for about 5 minutes until texture is smooth.
Cover and store in refrigerator for about 2 hours.

Making Tortillas
Heat a nonstick skillet over medium heat.
Pour 1/4 cup mixture in center and tilt pan to spread batter into a circle.
Let cook for about 2 minutes then flip to cook other side for another 1-2 minutes.
Be careful not to burn or else the tortilla will be too stiff for folding.

Add Ice Cream Filling
Add 3 to 4 heaping spoons of your favorite ice cream on top of the chocolate tortilla.

Making the Enchilada
Fold both sides of the chocolate tortilla to wrap the ice cream filling.
Final Touches
Drizzle with chocolate syrup and garnish with whole or cut strawberries.
