Chocolate Peanut Butter Surprise Cookies
These cookies are for the chocoholic in you! A peanut butter surprise adds to the fun. These are perfect for a cookie exchange, pot luck, birthday party, or you know, Thursday afternoon.
Prep Time 20 minutes Chill Time 1 hour Bake Time 14 minutes per batch Makes about 36 cookies
Ingredients:
- 4 oz Unsweetened Chocolate
- 1 1/2 cup Granulated Sugar
- 1/2 cup Oil
- 2 tsp Baking Soda
- 2 tsp Vanilla
- 4 Eggs
- 2 cups Flour
- 36 Miniature Peanut Butter Cups (like Reese's)
- Powdered Sugar (for dusting)
Supplies
- Mixing Bowl
- Double Boiler (or glass bowl & saucepan)
- Measuring Cups
- Measuring Spoons
- Hand Mixer
- Cookie Scoop (or spoons)
- Parchment Paper
- Baking sheet(s)
- Sifter
Melt the Chocolate
Set up your double boiler (or glass bowl & saucepan) and bring to boil. Add chocolate and stir with a spatula occasionally to help all chocolate melt. Once fully melted. Remove bowl or top of double boiler from the heat and let cool while you make the rest of the batter.
Start Making the Batter
Add sugar, oil, baking powder, and vanilla to a mixing bowl. Mix it together with the hand mixer.
Then add eggs to the bowl and mix it in with the hand mixer.
Bring on the Chocolate
Once the chocolate is cool to the touch, add it to the mixing bowl and mix it in with the hand mixer.
Then add the flour, half a cup at a time, until it is all fully incorporated.
Place bowl in refrigerator for at least 1 hour (up to 24 hours).
Bake the Cookies
Preheat oven to 375degF.
Scoop out cookies onto parchment paper covered baking sheet, evenly spaced. Bake in the oven for 13-14 minutes. Immediately after removing cookies from the oven, press a peanut butter cup into the top of each cookie. Then sprinkle sifted powder sugar over the tops.
*Be sure to have all of the peanut butter cups unwrapped before the cookies come out of the oven, so you can work quickly.
