Chile Con Queso
Chile con queso is the ultimate Mexican side dish! Comforting cheese dip for any snacks like nachos, tortilla chips or vegetables.
Spicy, delicious and hearty dish that you need to have for Cinco de Mayo or Mexican party.
Simple cheese dipping sauce that everyone will love (because who doesn't love cheese?). We enjoyed it with corn chips, while watching the movie, and it was so addictive! This is our go-to dipping sauce from now on!

Supplies
Heavy-bottom pot
2 cups yellow cheddar shredded
1 tbsp corn starch
½ tbsp butter unsalted
1 garlic clove
¼ onion
1 cup full fat heavy cream full fat
1 small tomato, chopped
Spices: ½ tsp garlic powder, ¼ tsp ground coriander, ⅛ tsp salt, ⅛ tsp chili flakes for decoration (optional)
¼ tbsp marinated green chili, finely chopped
¼ cup parsley or cilantro, chopped
Garlic and Tomato
Heat butter in a pan until melted, add garlic and cook on a medium heat couple minutes until aromatic.
Add chopped tomato and cook few minutes more.
Cheese, Starch and Cream
Add shredded cheese to the pan, then corn starch.
Stir everything with a spatula. Cook until cheese starts to melt.
Turn the heat to low and add room temperature full fat cream.
Stir, cooking until smooth.
Spice It Up
Add spices and marinated chili. You can chop fresh one, but it will be less spicy.
Add parsley or cilantro, stir and cook few minutes.
Let It Cool and Enjoy!
We served our Chile con queso warm in heat-proof dish with tortilla chips on the side.
Also sprinkle chili flake on top, if you wish.
