Chewy Chocolate Chip Cookies
Need a cookie recipe to produce the perfect cookies in just half an hour? I got you. This recipe gives you chocolatey chewy cookies, with a simple and easy recipe. Use up whatever chocolate you may have in the cupboard, I used 'snickers' and 'mars' type bars, but you can use anything!
Supplies
Ingredients
- 225g butter (room temperature or grated/cubed)
- 150g white granulated sugar
- 160g brown sugar
- 2 large eggs
- 1 1/2tsp vanilla extract
- 295g plain flour
- 1tsp baking soda
- 1/2 tsp salt
- 400g chocolate (chips, bars, plain chocolate. whatever it is it needs to be broken into chunks)

- bowl
- electric whisk
- sieve
- silicone spatula
Butter and Sugar
Set the oven to 190 degrees C. Add both the 150g of granulated sugar and 160g of brown sugar to a large bowl. Add in the 225g of butter. The butter needs to be soft, so cut it into cubes or grate it if it isn't at room temperature. Don't melt it!!!
Mix
Using the electric whisk, mix the sugars and butter together until thick, smooth and creamy. If you don't have an electric whisk, this can be done by creaming the sugar and butter with a wooden spoon.
Eggs and Vanilla
Once fully combined, add in the 2 large eggs and the 1 1/2tsp of vanilla extract. Mix with the electric whisk again. It should look a similar colour but a lot less thick. You don't have to whisk for long, this was for about 30 seconds..
Flour, Baking Soda and Salt.
Sift in the 295g of plain flour, 1tsp baking soda and 1/2tsp salt.
Mix
Using a silicone spatula, combine the flour and wet mixture. It will look a lot thicker and dryer. The mixture becomes difficult to mix, but persevere.
Chocolate
Once your mixture is almost combined, add in your chocolate! It should be in smallish chunks, so that it spreads evenly. I used 200g dark chocolate chopped into chunks and 200g of a mars bar and snickers bar type chocolate. In total, add 400g of chocolate. I have made these cookies with just chocolate chips, smarties, rolos etc. I think you can try almost anything!
Baking
Using a tablespoon, scoop the dough into rough spheres and spread out on baking paper on ovenproof trays. They need space between them as they do expand!
Cooking
Pop them in the oven for 10-15 minutes. They should be golden brown. When you take them out, they may have all smooshed into each other...don't worry! Use a spatula and gently press down on the edges around the cookies. You'll be able to see where one cookie starts and the other ends. If not then make it up! This will need to be done when they just come out of the oven and are still squishy, otherwise they will harden and be stuck together.
Cooling
Leave the cookies on the flat oven tray for a couple of minutes to harden, and then carefully transfer them to a cooling rack. Leave to cool on a rack for around 15 minutes or until they have hardened and reached room temperature. Then, enjoy 😋 They will keep in an air tight container for 5 days, or the freezer for longer.
