Caramel Latte Fudge

I love fudge. I think I've mentioned that before in one of my other fudge Instructables. The inspiration for this fudge came from RedditGifts. Last year I participate in the Holiday Exchange and my Santa sent me this amazing coffee flavored fudge, it really did taste like a caramel macchiato. After deciding that the flavor shouldn't be too hard to replicate, I came up with the recipe you see here. Once you have a preferred fudge recipe, meaning that the ingredients and the texture match your preferences, it's only a matter of trial-and-error to be a little creative.

Ingredients

-3 cups of sugar

-5oz evaporated milk

-3/4 cup of butter

-7oz marshmallows or marshmallow creme

-1 bag white chocolate chips

-1/4 cup caramel

-1 tsp vanilla

-2 tbs espresso powder *to taste* *fresh made espresso also works*

The First Four

Mix the first 4 ingredients (evaporated milk, sugar, butter and marshmallows) together in a large pot over medium-high heat. Stir regularly and bring to a boil.

The Chocolate

Let the marshmallow mix boil for about five minutes and then turn off heat and stir in white chocolate chips. Add vanilla and espresso powder.

The Caramel

When your chocolate is melted and well mix, add a couple scoops of your caramel to the fudge and stir in. I was trying to get a marbly-effect but I think the caramel I used was too soft. Next time I'll try caramel squares.

Transfer your fudge to a greased dish and let cool in the fridge until the fudge is set.
