Cake Mix Biscotti
Want an easy, quick way to make delicious biscotti to go with your hot beverage? Look no further! This Instructable will show you how to take any box of cake mix and turn it into biscotti! Have fun with different combinations of mix ins and flavorings. The possibilities are endless!
Ingredients!
This first list is for the Base Biscotti Recipe that you can mess around with to your liking. The second list is for the pictured Cranberry Pistachio Biscotti I made for this specific Instructable.
Base Biscotti Ingredients:
1 Box of Cake Mix
1 Cup of All Purpose Flour
3 Eggs
1/2 Cup of Butter, Melted
1 Cup of Mix-Ins (Plus a little extra for topping.)
Cranberry Pistachio Biscotti
1 Box of Yellow Cake Mix
1 Cup of All Purpose Flour
3 Eggs
1/2 Cup of Butter, Melted
1/2 Cup Dried Cranberries
1/2 Cup Unsalted, Pistachios
Making the Dough!
In a mixing bowl, first add the eggs and melted butter.

Next, add in the box of cake mix and all purpose flour.

Combine the ingredients and mix on medium speed.

After the ingredients have combined into a dough, add your mix ins until they are fully incorporated.
(For the recipe used for this Instructable - the 1/2 cup of pistachios and 1/2 cup of cranberries)
Roll Out!
For an easy roll out, grab some parchment or wax paper and cut a couple sheets to the size of the baking pan you are using. This will work as a guide.
Place one sheet on your work surface, then place the finished dough on it.
Gently flatten it a bit length wise for an easier roll out, then use any extra flavor mix ins (In this case the pistachios and dried cranberries) to sprinkle on top for some extra flavor!
Roll Out!
Place the second sheet of parchment or wax paper on top and roll out your biscotti staying within the dimensions of the sheets you cut and measured to your baking tray.
Roll to about 1/2 inch thickness.

This part isn't necessary unless you want to have more consistently length/shaped biscotti, which I like to do.
I use a knife to trim and clean up the edges, and move the extra dough to the length of it, placing the parchment paper on top and rolling it together again. See photos for reference.
Transfer to Baking Sheet
After you have rolled it out to your liking, transfer the biscotti to your baking tray.
Baking!
Bake at 325 Degrees F. for 15 minutes.
Rotate the pan. Then place back in the oven for another 15 minutes. (30 minutes in total)
After that, use a knife to slice your biscotti (Or cookie cutters for fun shapes.)
Place the cut biscotti back on a baking tray and place them back into the oven for another 12 to 15 minutes to finish them.
Finished!
Pull them out of the oven and let them cool. Then store in an airtight container or ziplock and enjoy!
