What if you could combine two great things, pizza and brownies, and have it still taste good? Well, I've done it! As a special bonus, it's healthy, too!! This "pizza" is a large brownie with cream cheese icing and fruit on top, with chocolate sauce dribbled over. This pizza is certainly one you've never seen before, and will be the life of the party at your next cookout. But you didn't come here to listen about how great it is. You can here to make it! Without further ado, brace yourself for a great dessert!

Ingredients/Materials

For this dessert, you'll need the following:

Ingredients:

  • Brownie Mix
  • Cooper Cream Cheese Substitute (Or Cream Cheese)
  • Semi-Sweet Bakers' Chocolate Bar
  • Fresh Fruit (Strawberries, Blueberries, Kiwi, Bananas, whatever!)
  • Sugar
  • Cooking Oil
  • Eggs
  • Butter

Materials:

  • Large Spoon (For Mixing)
  • Large Bowl
  • Pan, any type you like, but it must have edges built up!
  • Hand Mixer
  • Small Bowl
  • Small Bowl
  • 1/3 Cup
  • 1/2 Cup

Your Base is the brownie, just a little FYI. To make your brownie, just follow the directions on the back of the box. I've provided directions for if you were using MY mix.

  • 2 Eggs
  • Brownie Mix
  • 3 tbsp. of Water
  • 1/2 Cup of Cooking Oil
  1. In your large bowl, dump the whole brownie mix in.
  2. Add in 1/2 cup of cooking oil.
  3. After that, 3 tbsp. of water should be added into the mix.
  4. Lastly, add in your two eggs! Make sure no shell gets in your mixture.
  5. Stir it up with a wooden spoon.

The directions may vary per box of mixture. Follow what is on your box. Every mix is different, so what works for some won't work for others.

Finally, preheat the oven to what the box says. Mine told me 275, but I stuck with 250. Rebel!! \_(^-^)_/

Slice the Fruit

Wash the fruit. Set down your cutting board/mat. Slice your fruit. I figured that this step wouldn't need too much explanation, so I'm not going too much into detail.

I used strawberries and blueberries. Slice the strawberries, not the blueberries. The blueberries are small enough, and they aren't meant to be cut. Slice the strawberries into bite-sized pieces. Set the [cut] strawberries and [not cut] blueberries into a bowl. Mix them together if you like. I didn't mix them, but it would be smart to.

PAM the PAN!!

IMG_0937.jpg

Spray PAM over the pan to create a non-stick surface. Then, pour in your brownie mixture. Using a spoon, spread it to the corners and edges that might not be covered. This step is very simple, but make sure you don't leave behind too much in the bowl! Use a spoon to get the last bits out of the bowl if needed. Picture 5. shows the finished batter, ready to be baked! Enjoy the leftovers in the bowl.

Bake...and Wait

Set the brownie in the oven according to your package. I did 14-18 minutes, and that turned out great! Once it is done, remove from the oven, and wait an hour or two to let the brownie cool. This is very important, as if you skip this waiting step, and ice it while it's warm, the top layer will come off.

Making the "Icing"

After your brownie has cooled for about an hour or two, it's time to make the icing! Now, since this is a dessert, get your sugar and your Cooper Cream Cheese {substitute} out.

  1. Set the whole bar of Cooper in a smaller bowl.
  2. Add in 1/3 cup of sugar
  3. Mix on high until there are no lumps, and the mixture is smooth!

Once the mixture is mixed up nicely, spread it over the brownie using a spoon. Depending on which brand you use, Some of the top layer of the brownie may flake up. This is normal!

Garnish!

Scatter your fruits around the pizza. There should be a lot. Try to get the same amount everywhere, so no arguments or frustrations arise with your kids. As you can see in the pictures, there is a lot of fruit added! (;

Make the Chocolate Spread

Making the chocolate spread is fairly easy. It creates a chocolaty, crisp, cool, flavor.

  1. Break off 4 bars of the Bakers' Semi-Sweet Chocolate Bar.
  2. Add in a little bit of butter.
  3. Toss in the microwave, and heat on high for 5 seconds.
  4. Stir with a spoon after removing from the microwave.

Apply the Chocolate Spread

IMG_1007.jpg

Apply the chocolate spread over the fruit by "loading" some onto a spoon and flicking the spoon around. Try to avoid clumping up the chocolate spread in 1 area. Remember, little goes a long way here!

Voila!

You're finished! Stick the brownie pizza in the fridge until serving time. Slice and Enjoy your brownie pizza!
