Breaffins

Hello everybody,

bored of eating the same plain bread, I thought to make my own bread, adding some of the ingredients I like the most, which are tomatoes, rocket and mozzarella. In this Instructable I am going to show you how to make savoury muffins usign the bread recipe as starting point, that's why I have called them breaffins

Let's get started!

What You Will Need Is

To make this recipe you need:

For the base

  • 240 g strong flour
  • 1 sachet fast action bread yeast (7 g)
  • 30 g Parmesan cheese
  • 2 eggs
  • 60 g vegetable oil
  • 200 g milk
  • fine salt

For the flavourings:

  • 50 g rocket
  • 2 Early girl tomatoes
  • 125 g mozzarella
  • Poppy seeds

The ingredients above will make 12 pieces in total, three flavours each. I have made three different types of breaffins: one with rocket, one with tomatoes and one with mozzarella cheese and poppy seeds. You can choose the flavours you like the most. For example I would suggest breaffins with black olives or with cherry tomatoes and basil. You can really dare here!

You will also need:

  • scale
  • 1 big and 2 medium bowls
  • 12-hole muffin tin and 12 muffin cases
  • cheese grater
  • hand whisk
  • spoon
  • knife
  • chopping board

Timings:

  • 20 min prep time
  • 20 min baking time

Prepare the Flavourings

First off, start with the ingredients for the flavourings. Take the mozzarella cheese and dice it in small cubes.

Wash the rocket salad and the tomatoes next. On the chopping board, finely chop the rocket salad, slice the tomatoes and reduce them into small cubes.

Combine the Dry Ingredients

This is the step that combines the dry ingredients. Start by scaling 240 g strong flour in the big bowl. Add yeast and salt on top of it. Using the grater, add 30 g of Parmesan cheese to the mix of dry ingredients.

Stir the ingredients using the hand whisk

Eggs and Liquids

Take the second bowl and crack the two whole eggs in there. Pour the milk in the same bowl and then the oil.

Beat the mix energetically using a hand whisk, until it reaches a creamy consistency, like the one in the picture.

Create the Base

Now that you have beaten the eggs mix and combined all the dry ingredients together, it is the time of combining the content of the two bowls together. Slowly pour the egg mix into the big bowl while mixing. Continue until everything is well incorporated and combined.

The bread part of the breaffins is done. Separate the mix in three equal parts in three different bowls.

Enrich the Bread

Do you remember that you have some ingredients ready to use? It is their time now!

Take one of the bowls with the mix in it and add the diced mozzarella and a pinch of poppy seeds.

In the second bowl add the rocket and the chopped tomatoes in the third one. Mix thoroughly the content of each bowl.

Ah, leave a tiny bit of toppings aside: you will need them in the next step.

Baking Time

Preheat the oven to 180°C.

Line the muffin tray with the muffin cases and divide the three different mixtures between the cases, filling them three-quarters full.

You should end up with four breaffins for each flavour. Guarnish each breaffin with its topping: add some tomatoe cubes to the cases with the tomatoes mix, sprinkle some rocket leaves on the top of the mix with rocket and put some diced mozzarella and poppy seeds on top of the third mix.

When the oven reaches the set temperature, place the tray into the oven and bake the breaffins for 20 minutes.

Ready!

After 20 minutes, extract the tray from the oven, leave it to cool for a couple of minutes and then remove the breaffins from the tin.

Enjoy them warm or cold, as a snack or as a side to your favourite soup or sauce.

You can freeze the breaffins up to one month, if you can resist not eating them immediately.
