Tip #1 When boiling water add salt…not only to lower boiling temp, but also to give it a little taste.

Boil water in a large enough pot to fit desired amount of asparagus.  Set up an ice water bath by taking a large bowl and filling it half with ice and half with cold water.

Stop Cooking!

Tip #2 When blanching you must be attentive or else you can easily over cook.

Prep asparagus by trimming off a couple of inches of the ends. Now add the asparagus to the boiling water and let cook for about 5 minutes.  During this time you can poke the asparagus with a fork and if it pierces the asparagus is cooked through.  Once it is cooked remove from pot and immediately submerse in ice water bath for about 20 seconds.  Remove from ice water, shake dry, season as desired, and serve.

  • You can blanch most fresh veggies, and the point of blanching is to keep that fresh crisp and taste.
  • Also blanching is quick and allows the vegetables to keep their awesome color.
  • Serve on the side of almost any chicken dish.
