Banana Muffins

Hi, I'm Mariel! I always find myself craving a treat to eat, and as a busy student, if I wanted to make some for myself, I needed to use a recipe that was quick and easy to follow. This recipe for banana muffins is just that!

The purpose of this instructable is to teach you how to make the delicious muffins seen above. They only take about an hour to make and by the time you're done, you're left with a yummy treat!

Gathering Supplies and Ingredients

Supplies:

  • A tool for mixing (spatula, etc.)
  • 2 large bowls
  • A sieve
  • One muffin/cupcake pan
  • Paper muffin/cupcake liners (optional)

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 large bananas (overripe)
  • 3/4 cup brown sugar
  • 1 egg
  • 1/3 cup melted butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon

This recipe yields 12 muffins.

Preheating the Oven

Steps:
  1. Preheat the oven to 350°F.
  2. Line a muffin/cupcake pan using paper liners, or coat the pan with a non-stick spray.

Preparing the Dry Ingredients

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Steps

  1. In a large bowl, sift together the flour, baking powder, baking soda, and salt. Stir until combined.

Preparing the Wet Ingredients

Ingredients:

  • 3 large bananas (overripe)
  • 3/4 cup brown sugar
  • 1 egg
  • 1/3 cup melted butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon

Steps

  1. In another large bowl, press down on the 3 large bananas using a spoon or fork, until well mashed.
  2. In the same bowl, mix in the brown sugar, egg, melted butter, vanilla extract, and cinnamon. Stir until the ingredients are fully combined with the mashed bananas.

Forming the Batter

Ingredients

  • Dry ingredients from Step 3
  • Wet ingredients from Step 4

Steps

  1. Fold in the dry ingredients from the Step 2 into the bowl from Step 3. Mix until a smooth batter is formed.

Baking the Muffins

Steps:
  1. Scoop the batter into the muffin/cupcake pan.
  2. Bake the muffins in the oven for 25-30 minutes (350°F)
