Auntie Anne's Pretzel Bites

Who doesn't love pretzel bites. Especially with cinnamon and sugar. I love Auntie Anne's pretzel bites and decided to try and make some. I have made pretzels before but needed to make them a little sweeter. They turned out really good I hope you will try.

Ingredients

1 package of yeast

1 1/4 cup of warm water (110 degrees)

1 tsp sugar

3 cups of bread flour

3 tablespoons brown sugar

1 tablespoon butter melted

1 tsp salt

6 cups of water

1/2 cup of baking soda

1 /2 cup sugar

1 tablespoon cinnamon

1/2 cup butter melted

Mixing the Yeast

Lots of people are afraid to cook with yeast. It is really easy to do. Mix the yeast, 1 tsp of sugar and 1 1/4 cup of warm water. Make sure the water is around 110 degrees. Also check the date of the yeast. It may not work if it is old. You are going to let it rest for 10 minutes. It will start to look like it has bubbles.

The Dough

Mix the yeast mixture, brown sugar, salt and 1 tablespoon of butter. Mix this with the wire whisk attachment. Now start adding the flour. When it starts to separate from the bowl, change the attachment to the hook. Now finish mixing with the hook. Finish mixing with the hook and add the rest of the flour. It will be sticky but easy to pull out of the bowl.

Let the Dough Rise

Put a little oil in your bowl and cover the bottom and sides. Now add the dough and cover with plastic wrap. Put the bowl in a warm spot. Let it rise for a hour.

Boiling Your Pretzels

When the dough has risen you are going to heat your water. Put 6 cups of water in a large pan with the baking soda. Let the water start to heat. Turn your oven on to 425 degrees. Also put a piece of parchment paper on your cookie sheet. Take the dough out and cut in to four pieces. Now roll out each piece in a strip that is around 30 inches long. Cut each rope into pieces an inch wide. Drop the pieces into the hot water for 10 seconds. Drain and put on a cookie sheet with parchment paper.

Baking and Finishing

Bake the pretzel bites for 10 minutes. After you take them out of the oven melt the butter in a glass bowl. Put the pretzel bites in the butter and then drain and put in a separate container. Mix the sugar and cinnamon. Put the pretzel bites in a brown paper bag and pour in the sugar mixture. Shake and put them in a container with a lid. Try not to eat them all while they are warm. They taste just like Auntie Anne's.
