Achappam is a deep fried rose cookie made with rice flour. It is a signature Syrian Christian food believed to come from Dutch influence. In Kerala, Karnataka, goa also in tamilnadu it is an essential snack for Christians on special days. Rice is the main ingredient you can make this achappam with sugar or jaggery. With some simple tips and trick you can easily make this cookies at home just follow the stepwise instructions and enjoy making this cookies at home. Supplies

Ingredients for achappam ( rose cookies)

1 cup rice flour

1/2 cup all purpose flour

1/2 cup powdered sugar

1 cup coconut milk ( add more or less as to get pouring consistency of batter(

1/2 tsp cardamom powder

1 tbsp black seasme

Pinch of salt

Oil for deep frying

Adding Dry Ingredients Together

First let's mix all our dry ingredients together. The ration of rice and all purpose flour totally depend on your choice but I prefer adding more of rice flour than all purpose flour as rice flour helps us to get tht crunchy cookies so let's start In a big bowl add rice flour, all purpose flour, powered sugar, cardomom powder, salt, black seasme you can take white seasme too it's totally your choice now mix everything together.
Note : sugar you can add more or less as per your taste this achappam are generally less sweeter than other cookies.

Adding Coconut Milk in Our Dry Ingredients

Now we have to add coconut milk in batches with our dry ingredients to get pouring consistency like we do for making dosa batter pls check video to understand the proper consistency. Onces the batter is ready let it rest for half and hour. We have used powered sugar so we have rested our batter only for half and hour if you using granule sugar pls let it rest for atlest 2hour before frying them.

Let's know abt achappam mould if you are using this mould first time ,we would advice you to grease this with oil and keep aside for atlest 24 hour before using this it will help your cookies to slide properly into hot oil.

Heat oil in a broad pan and Place acchapam mould in oil, Now remove the immersed iron mould from hot oil and dip half way in the batter and deep fry in hot oil. Now shake the mould gently and the cookie will slide away. Fry them in low to medium heat and fry only three or four at the time don’t cluster with too many. Fry until crisp and light brown from both sides.Repeat the same with the rest of batter. Re-heat the iron mould into hot oil immerse in batter and then deep fry the cookie. Place cookies on absorbent tissue paper and allow them to come to room temperature. Store into an airtight container.

Our super crunchy achappam is ready pls take care of few things while making achappam first time Ensure you fry the cookie on low to medium heat else they might burn.it's important to immerse the mould in hot oil else the batter won't stick.if the cookie if not sliding from the mould don't panic remove separately with the help of fork or knife.
