50 Shades of Bird Bondage
How to tie your bird up so it doesn't fly away. You need a bird and some string.
Rinse
Remove it from the package and clean that dirty bird off.
The Dirty Work
Take a length of butcher twine, about 18 to 24 inches and fold it in half to find the middle.
Lay the chicken on it's back and put the middle of the string in middle of the bird's back and bring the ends up over each wing and drape it down each side between the leg and breast.
Make a surgeon's knot (see picture) and pull it tight under the breast bone.
Put one leg on top of the other then bring the ends of the string up and tie the legs together.
Trim off the excess string and you're done.
Extra Step
I like to park my chicken in the refrigerator for a few hours so that the skin will dry off. Helps accelerate that crispy browning.
